Haven’t fully got the calories counted on this one, but I did some and tracked the ingredients used, got some shit I need to buy to complete my kitchen When I went to grab the chicken there was a nice crunch, I could have fried it a little longer and there was just slightly too much liquid in the braise but overall I’m satisfied Beans aren’t too hard, chicken cooked through almost overcooked but it’s dark meat so forgiving, actually juices came out when poked Chicken leg quarters are good and scraped up the brown bits and schmaltz and put it in the salsa The point of the dish is the intense chicken flavor, tart and vegetal and slightly spicy sauce largely made of tomatillo, lots of texture variation with the braised chicken and crispy skin It’s salsa verde and the beans are added at the end, after simmering in chicken stock and bay leaves for 2 hours and being soaked for 2 days, dry beans are a motherfucker to work with I bought drinks after it was 90% done, I’ve been cooking for 4 hours (had to go buy some missing ingredients) and made a big mess, it would be more manageable if I did meal prep the night before, it’s perfectly acceptable to make the salsa verde ahead of time The rice was an afterthought, if I had guests over they’d probably wonder where the carb side was, so I just bought some easy to make rice and substituted chicken bone broth for water and added 2 tbsp butter, typically I’d make a plainer cilantro lime white rice instead but I like how this turned out
